Quinoa Buddha Bowl
Makes 2 servings
* 1 cooked cubed Sweet Potato (baked, boiled or steamed)
* 3/4 cup Quinoa (before cooking. Turns into 2 1/4 cup cooked quinoa)
* 1 avocado
* 2 tablespoon cilantro, chopped
* 1 cup cooked kidney beans (or any other kind! Black beans work great!)
* Lettuce of choice (lambs lettuce, spinach, etc)
**Add-Ins**
* Nuts of choice
* Seeds of choice
Tahini Dressing
Makes about 1/2 cup
* 1 large lemon, juiced
* ¼ cup extra-virgin olive oil
* 1 garlic clove, minced
* 1 teaspoon Italian seasoning
* Sea salt and black pepper
* Mix all the ingredients together in a small bowl or mason jar.
Add all ingredients to a bowl in the ratios you prefer. Add dressing & toss. Enjoy!
