Makes 3 full waffles
Ingredients:
*1 cup Oat Flour (or any gluten free flour)
*1/2 tsp Salt
*2 tsp Baking Powder
*1/8 tsp Baking Soda
*1 tsp cinnamon powder
*1/2 cup sweet potato puree
*4 tsp Maple Syrup
*1 tsp vanilla
*1 Egg Separated
*1 TBSP Melted Coconut Oil
*2 TBSP Melted Coconut Oil for greasing
*3/4 cup non-dairy milk
Method:
Heat up your waffle iron while you gather your ingredients.
In a medium bowl add all your dry ingredients & Stir together.
Add separated egg yolk and all wet ingredients & Mix together.
Pour wet ingredients into dry ingredients and mix it all together.
In a small bowl beat your egg white until fluffy or lighter. Add to your batter and fold into mix.
Grease waffle iron with coconut oil, Add batter and cook! Once the timer or cooked light comes on your done!
Top with maple syrup, fruit, nuts and/or seeds. Enjoy!
