Makes 1 Flatbread (1-2 servings)
(Vegan, Gluten Free, Nut Free)
Ingredients:
*Gluten free Flatbread (you can make or buy to your liking)
*Fresh Figs
*arugula
*1 Caramelized onion
*1 tablespoon olive oil
*roasted Sunflower seeds
*balsamic vinegar or any kind of chutney
Spread:
*1/2 cup roasted sunflower seeds
*1 tsp salt (add to taste)
*1 tablespoon onion powder
1 tablespoon garlic powder
*1 tablespoon paprika powder
*1 tablespoon nutritional yeast
*1 tablespoon olive oil
*1/3-1/2 cup water
Method:
Chop the onions in thin strips and add to a pan. On low heat with a tablespoon of olive oil, stir them occasionally until they are caramelized. You can add a pinch of salt or balsamic vinegar for additional flavor. If they start to burn,
you can add some water.
When the onions are half way done, Heat up the oven to 350F (170C)
Once the oven is ready, add the cooked flatbread to warm up. (about 5-10 min).
Remove the flatbread and add the sunflower seed spread across the entire flatbread.
Add arugula, caramelized onion, chopped fig, and roasted sunflower seeds
Drizzle over balsamic vinegar or chutney
