Makes 4-6 portions
(vegan, Paleo, Gluten Free, Nut Free, Dairy Free)
**Cream Base**
* 1/2 cup raw sunflower seeds
* 1/3 cup water
* 1 teaspoon vanilla
*1 tablespoon coconut oil
* 1/6 cup maple syrup (more or less depending on your liking)
*1 teaspoon salt
**Toppings**
* Fresh Figs (around 4-6)
*Pomegranate (around 1/2 of one)
* Toasted Coconut
*Toasted Sunflower seeds
* Chocolate Shavings or bits
*Any other nuts or seeds to your liking
Place the ingredients for the cream base into your food processor emulsifier attachment and blend at high speed until a smooth cream is created.
If it's too wet, add more dry (sunflower seeds)
If too dry, add more wet (maple syrup or Water depending on taste)
Taste along the way to balance salty & sweet
Pour into into a bowl or individual servings. Top with any toppings of your choice. Add a pinch of flakey salt if needed
Note: Figs and cream are soft & rich, so work to find the balance of texture with the crunch of the pomegranate, seeds,
coconut & chocolate. More pomegranates help balance the richness with their acidity. A little bit of this
dessert goes a long way!
